perfect fried rice

Batch 1: cook meat sliced to thin cubes (4 pcs pork shoulder or chicken gillet) Batch 2: 1 carrots minced 5 garlic minced 1 onion diced Batch 3: 3 eggs beaten cooked meat in bite-size Batch 4: 7 cups old rice - chilled and clumps separated 2 1/2 tbsp soy sauce 2 tbsp fish sauce 1 tsp mirin 1 tsp sesame oil Add seasoning, to taste: Pepper red chili flakes - optional Add Toppings: 1 green onion, thinly slice You can also add: roasted nuts, sliced pineapples Instructions: In a wok, put 2 tbsp oil then cook and set aside each batch (batch 1 to batch 4) Tips: Use the WOK. Use high heat.  🔥 The thinner the meat slice, the quicker & better cooked it will be. Do not put so much rice at 1 go.  This keeps the wok really hot. Do not put so much sauce or rice will get sticky; you can always add more at the end to taste.

You know the feels when watching fleeting clouds shift shape as the wind blows ?  Yes, a happy moment.🙂 In this fast-paced generation, simple things are precious, and helps put us back in the right track. Eating onigiri in any shape and form likewise evokes the same fillings  (pun intended!)  for me and my family. Onigiri is a traditional Japanese rice ball. (Hurrah! Nihon!)  There are many variations on its filling. In the few times I've been to Japan, I noticed that it was usually enjoyed for lunch or snacks; mostly by  students or busy workers on their quick breaks. Onigirazu is similar to onigiri, only it's not round, but flat, quite easier to prepare for tiny hands of the little ones. Shrimp Pilaf (rice) ho ho ho

🦐🦐🦐  SHRIMP PILAF  🦐🦐🦐 Sometimes the usual fried rice gets tiring. 😵 Thankfully, aromatic memories of that tasty Shrimp Pilaf wafted to my brain.  This was my usual fare in the kenshu center's canteen back in my Japanese language training days. 😋 Hurray to this southern twist of fried rice. Another option for my growing kids --- to infinity and beyond for their tastebuds!  🙋👄 i n g r e d i e n t s: onion - minced garlic - minced carrots - minced green bellpepper - diced sausage sliced diagonal shrimp, deveined 1 tsp Cajun 1 tsp Smoked paprika 1 cup chicken stock dash of salt and pepper old rice Toppings: fresh parsley (or celery leaves) Fried eggs or whatever floats your boat! Hungry family's verdict:  2-thumbs up!
