A breakfast dish in Mexico (🔉 chee-La-kee-les). Eggs, tortilla chips, Chili sauce. Chilaquiles, where've u been all my life? Since I don't have tomatillos and jalapeno, I opted for the Rosso red version... Improvised with tomato paste, tomato sauce, red chili flakes, & singles cheese. Added cabbage shreds & cucumber bits for a heartier meal for my hungry tribe. I can imagine the authentic version will zoom me out of this world and then drop me straight in vibrant Mexico.
