BOMbastic banana ala Mrs. B.


๐ŸŒ Ingredients

  • 4 medium sized bananas, halved then slice to thirds.
  • 3/4 cup All Purpose Flour
  • (Thai rice flour would even be better!) 
  • 4 tsp Corn Flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup brown sugar ???
  • 1/3 cup coconut cream (grated coconut would be better!)
  • 1/2 cup water
  • 4 tbsp toasted sesame seeds
  • Canola oil (or any neutral cooking oil with high smoke point)


๐ŸŒ Steps

  1. Slice bananas.
  2. Toast sesame seeds.
  3. Prepare batter in the mixing bowl. dry ingredients first.  Whisk well.
  4. Add wet ingredients to batter, whisk well. Do not overmix so the batter won't get "glutinous".
  5. Heat the oil in the pan (320° to 330°). not too hot so the fritters will not get burnt, but will cook well on the inside.
  6. Do the oil hot test (dip chopstix in, bubbles form)
  7. Dunk a banana slice into the batter, and shake off excess gently.
  8. Add the bananas to the hot oil carefully one at a time. Do not overcrowd the pan.
  9. Stir once in a while so the bananas dont stick to each other.
  10. Once golden brown, about 4-5 minutes, flip and fry the other side til golden brown, about 3 minutes.
  11. once cooked, take out from the pan, using a spider or strainer. 
  12. Strain on wire rack or strainer to remove excess oil, and rest for 5 minutes.
  13. Serve and enjoy while warm!

✅ Tip: Even a few hours over-ripe banana will make these fried fritters a bit mushy in a short amount of time.

Use just ripened for this recipe, yellow yet firm to the touch. And it will be crispy for a while (unless hungry teens & a young fellow gets to it!).

Stir Fry So Hor Fun

" Hor Fun " or " kway teow " is a thick, flat rice noodle. " Char " means fried in Hokkien. It is a staple in Chinese cuisine, distinctly with wok hei ... I would say that delicious charred, roasted in wok taste.  Yup, this one's a favorite in my nest.  Have fun wok-tossin'! ๐ŸœTools Chopping board Knife Wok (or deep & wide frying pan) Ladle microwaveable bowl that can fit your portion of noodles to cook ๐ŸœIngredients 125g Chicken fillet,julienned a fistful of Shrimp,  peeled,  deveined,  washed & pat dry 1 small Onion, sliced 5 Garlic minced A stub of Ginger, minced 1 pack Hor fun noodles Soy sauce Oyster sauce Chicken broth Bok choi or  Pechay, sliced, whites separated from the leaves 2 Eggs, scrambled Kalamansi / lime / lemon wedges Crushed nuts for topping (optional) ๐ŸœSteps Place the noodles in a bowl. i & our achi are having a bout of colds & flu.  she got hers from school, i think.  and i got mine from hers, from the all-nighters i had taking care of her the 1st few days onset.    but by God's grace, we are better, it's just a matter of time :-).  our shobe is just like her papa, healthy as a horse, (er maybe pony would suit her better), and still all by God's grace! :-)    s o anyway, i just had to cook some soup for us.. something easy to swallow w/ our sensitive throats, not oily, and with a chock-full of vitamins to help our bodies in this battle with the virus.  to me,  tinolang isda (translation: fish) is just the right answer! t he last time i cooked tinolang isda was in Cebu 7-ish months ago.   when I and my family got here, i was hesitant to cook the same, because i was not familiar with the fresh fish in this region.  Always, all i end up buying at the grocery is the same packed frozen suchi fish.. and i h...
