Teriyaki sauce 🏺

Aromatics- garlic cloves, spring onion, ginger charred in broiler/toaster for 10mins 1/4 cup soy sauce 1/4 cup mirin 1/4 cup sake, or noodle sauce (daiso) 1/4 cup sugar 1/2 cup water *to reduce, simmer until reduced, and to taste. Mochi: product review 🙁

Mochiiiii.😍 Adorable, squishy, and umami Japanese sweet not so sweet. The taste of authentic ones is heavenly. Item: mochi Name: Mochi (salted caramel) Brand: Royal Family Verdict: it was so so unfortunately. Texture was nicely mochi. But couldn't taste much of the salt and caramel though.  🙁🙁 Hopefully will chance a better one next time.

hiroshima okonomiyaki- fast n yummy

Okonomiyaki is always a fam favorite. But when there's no griddle or flat stove and you're cooking not for 1 but 6, the cooking time challenge is on!  A very substantial okonomiyaki version will do just the trick, so that even a single serving per person fills and feels just right. No need to make 2 portions for each hungry mouth ---- Achievement unlocked- cooking time halved! And so here comes hiroshima okonomiyaki, crispy cabbage loaded with ham, noodles, and eggs. Creamy Miso 🥣

I hated miso soup. And then I loved it ever since. This comfort soup may have a slight tangy taste depending on what type of miso is used. My hubby does not like a hint of sour/tangy stuff. To discover that milk could be added to spin off the taste was a welcome revelation!!! The aroma and taste always takes me back to my days in Japan. My very 1st sip of miso soup was at the canteen of an all-ladies dorm during my very 1st work trip in beautiful Tamagawa prefecture. It was my 1st time away from my motherland, and 1st time to experience winter, at that. To say that I was in a state of culture shock is an understatement. I loved soft fluffy Japanese rice. The roasted flaky saba fish. Ramen noodles. Crunchy karaage. Not miso soup though. I hated miso soup. But that fateful cold night, I have just reached "home" from the 10-minutes trudge from work. Rollin' gooood 🍗🍙

Chicken seaweed rrooollll had us drrooollllin' for more.  The portion i made was not enough LOL. We tried asian style marinade- ginger & garlic combo and it was good. Plus, it's another use of the fam's favorite seaweed / nori. Serve & eat immediately to enjoy that crunch! Tips: - need more than 500g chix fillet for the growing teenage bunch.  Maybe, 750g. - pretty certain this will be great with other chix-marinade flavors like teriyaki, buffalo wings, soy-garlic, etc. - wrap most of the meat, i.e. use more nori, showing a peek of the protein on both ends. oyakodon!

The quicker, way easier to prep version of KatsuDon. Love that i don't need to bake or fry the protein. But still packs the same flavor punch. This has become my nest's comfort food. 🥣 Ingredients Chix breast, sliced bite-size (smaller is better) 2 large onions (or MORE!), sliced THIN) 2 tbsp Japanese noodle soup (daiso) 2 tbsp mirin (optional) ~1 tbsp Brown sugar 2 tbsp Soy sauce 1 cup Water Cooked Japanese rice 🥣Tools Whisk & bowl Not-so-shallow cooking pot Pot cover Spatula 🥣Steps Add onions to the pot, add 1/2 of the sauce. Fire up to medium heat. Add sliced chicken, make sure its coated in the sauce. Let the chicken cook for 2 minutes, flip on each side. Cover and cook for 6 mins. Add the whisked egg. Cover for 30seconds. Top with spring onion. Turn off heat & transfer to serving bowl of warm rice. happy onigirazu day! 🍙

You know the feels when watching fleeting clouds shift shape as the wind blows ?  Yes, a happy moment.🙂 In this fast-paced generation, simple things are precious, and helps put us back in the right track. Eating onigiri in any shape and form likewise evokes the same fillings  (pun intended!)  for me and my family. Onigiri is a traditional Japanese rice ball. (Hurrah! Nihon!)  There are many variations on its filling. In the few times I've been to Japan, I noticed that it was usually enjoyed for lunch or snacks; mostly by  students or busy workers on their quick breaks. Onigirazu is similar to onigiri, only it's not round, but flat, quite easier to prepare for tiny hands of the little ones. Le Grand Christmas Baked Sushi 🍣

"Well, hello there, Mr. Baked Sushi .  🤵  So very pleased to make your acquaintance." Somehow, I relate this dish to a wonderful and kind gentleman, looking crisp in his tux, at a midnight ball in his elegant chateau, everything sparkly and cozy lit up.😜 Likely because all this happened on Christmas in the Philippines, and hands-down  n othing is more festive and wonderful than Christmas in the Philippines with family .🎄 ⭐ 🎄 ⭐ 🎄 And so, settled back in our humble abode in the little red dot  after the Yuletide holiday,  the baked sushi experience was not over yet. Subarashii !   Hiragana:   素晴らしい  Katakana: すばらしい  Romaji:  subarashii  English : Great! Awesome. So good! For most pinoys, rice is life. To my Z, noodles is life.  It has been her favorite ever since, the if-u-were-to-eat-only-1-dish-for-a-year kind. To add some variety to her all-time favorite, we ventured to one of her favorite places - Japan!  And so we tried the  SOBA noodle dish, and it was a  good, good, good meal,  hontou ni (really) . This has been a mainstay in our meal recipes at home. It is easy to prepare, although, it requires typical Japanese ingredients on-hand (w hich, if you stock on it, will help you recreate more umami dishes hailing from Nihon). On humid days, it's "cooling" effect is just refreshing. Best of all, its a fun way to eat for the kids, like: use chopsticks ,  dip dip dip  a-dippin, those noodles into the sauce don't-drop-it- keep-it-tween-the-sticks challenge slurp, slurp, slu...

Pickle it, just a little bit! 🎤🎹

Cook Time: 3 minutes Prep Time: 25 mins Amazuzuke :  Sugar vinegar pickling   Tsukemono : literally  "pickled things"   What's not to love with pickles?  says anyone with sour tooth. 😋  And even if you're the polar opposite, give this a try.  P ickles are known palate cleansers, when paired with  rich-tasting dishes, like fried chicken, pork bar-b-q, even ramen, meals become more enjoyable. So here's an easy refreshing Japanese pickle recipe.  Ingredients  🥒  1 Daikon (radish) 1 Carrot sliced rectangular 1/4 Cabbage - julienne or squares 1/4 cup Rice or cane vinegar 1/8 cup white sugar 1 tsp salt Remove moisture  🥒 Place the vegetables in a bowl or ziplock bag. Sprinkle 1 tsp salt. Massage and mix well together. Leave and let it rest for 15 minutes. Drain the liquid. Prepare the brine  🥒 Mix vinegar, sugar and salt in a small pan. Shoga-Yummy Sauce

Shogayaki Sauce 🍶 For 500 grams meat ratio: 1 stub ginger grated's juice (squeeze out juice) 1/2 onion grated 1 tbsp soy sauce 1 tbsp sugar 1 tbsp oil 1 tbsp mirin - optional 1 tbsp sake - optional Mix all ingredients. Generally use as marinade for shogayaki pork dish.

Craving for a tasty porky easy Japanese dish? Shogayaki ... tasty, porky, easy.  It rhymes! i n g r e d i e n t s: 500g pork shoulder butt.           (Suggestion: try bacon or collarbone or shabu2x thin pork cuts) Ginger 1 stub grated, keep the juice 1/2 onion grated 1 tbsp soy sauce 1 tbsp mirin** 1 tbsp sake** 1 tbsp sugar 1 tbsp oil **Alternative: daiso noodle sauce or tori-q sauce s t e p s: Marinate for 5mins Dry in paper towel Cook in oil The aroma in the kitchen as you cook this is amazing.  Even more so, the taste. It takes a few simple steps only, but the result is a really flavorful dish. This pairs perfectly with:  warm rice,  warm noodles, or crisp shredded cabbage & cucumber slices! crispy bread?  haven't tried, but  might just work, like a classic philly sandwich, japs twist...  As with my other pictures, the one below doesn't do it justice. Okonomi-yummy!

Okonomiyaki This Japanese dish is simple to make, delicious, and very filling! Non-batter ingredients : 1/2 head cabbage julienned then cubed scallions / spring  onions Spam / bacon / thin pork belly slices (optional) Bonito flakes (optional) Batter ingredients : 1 cup plain flour / cake flour 1.5 tsp baking powder 1 cup dashi (or 1/2 chicken bouillon cube dissolved in 1 cup hot water 1 cup fresh milk  + 1tsp baking powder (or  cup  japanese  mountain yam2) 4 eggs lightly beaten Whisk together all batter ingredients except eggs        (do not  overwhisk ). Cover and put in  fridge  for 20 minutes. After 20 minutes, whisk in gently the beaten eggs. Add scallions / spring onions (leave some for garnish). Add cabbage. Mix well. Like coleslaw - but  pancakey  cabbage. Okonomi sauce ingredients : 1 tbsp white sugar 3.5 tbsp  worcestershire  sauce 2 tbsp oyster sauce 4 tsp ketchup...
