My simple food ode to the great Queen Elizabeth II who recently passed on to the sweet by and by, to be with the King of Kings, The Lord Jesus.

"pepino sa pan"? quizzical. 💭 To me, it's totally unheard of. But directly translate that to "cucumber sandwich" and then it starts to make sense. interesting.

I have been on the lookout for healthier but filling alternatives to our usual sandwiches; I got curious when I saw this cucumber sandwich on my FB feed a few days ago. promising

'Seems to me a typical high tea sandwich that I've never tried before. I don't know about you, but a teeny slice of pickled dill in a hamburger is just about my closest to this cucumber sandwich! 😁 

So we tried this English staple and here was our 1st take for a light dinner; it was pleasant and soothing, a little heat from the chili, but the cucumbers were cool to the throat, just perfect to cap a warm-weather day.

🥪 Ingredients:
1 Japanese cucumber, sliced in thin circles
3 cheese singles + 1/2 plain yogurt (or cream cheese)
chili flakes (to your chili heart's content)
wheat bread, toasted
butter, spreadable

🥪 Steps:
spread some butter on the bread.
pan-toast on the stove, or in a toaster, slightly toast the bread with some butter.
on the serving plate, lather cream cheese spread on the toast (to your 💚's content)
assemble, line up the cucumber on 1 side of the toast.
sprinkle with red chili flakes.
top with the other toasted bread.
slice diagonally.
with your favorite beverage, eat and enjoy!

Tips: 
1. cream cheese alternative
2. best eaten immediately after assembly (no overnights, soggy bread is a no-no 😑)

Corn Ribs Steak 🌽

If you love nibblin on a sweet corn and you also love a good juicy steak, (and u love corny dad jokes. 😁🤭) knock yourself out with this healthy snack. 😃🥰 Steps : Prep the dry-rub Mix well in a small bowl the following- 1 tbsp Garlic powder (or shredded garlic, or garlic paste) 2 tbsp Smoked Paprika 1 tsp Red Chili Flakes* (to taste) 1 tsp Pepper* (to taste) 1 tsp Salt Prep the corn ribs 2 pcs whole sweet corn, cleaned, sliced to bite-sized "sticks" Place the corn ribs in a big non-staining* mixing bowl.   (*paprika powder can leave stains in wood or plastic, i found 😿) Add the dry rub and rub gently ALL OVER the corn. ( *viz iz va secret to oozing great taste 😉) Leave to rest for at least 15 minutes. Heat up a grill pan or frying pan to medium heat. Melt a knob of butter. Arrange the ribs on the pan, do not crowd. Creamy Miso 🥣

I hated miso soup. And then I loved it ever since. This comfort soup may have a slight tangy taste depending on what type of miso is used. My hubby does not like a hint of sour/tangy stuff. To discover that milk could be added to spin off the taste was a welcome revelation!!! The aroma and taste always takes me back to my days in Japan. My very 1st sip of miso soup was at the canteen of an all-ladies dorm during my very 1st work trip in beautiful Tamagawa prefecture.
