I am no master in the kitchen.  I am in fact, a newb.  Some days i whip up good food using my own imagination, some days, i get inspired by another recipe (so thankful for YouTube!) i start tweakin' and 30 mins or so later of drooling for the finished product, voila, the food from my stove is just blah. T_T

Although my hubby has got way more kitchen sense than me, i am the cook in the family, because i am the full-time homemaker these past few months.  It has been a real real real real challenge to deliver good food on the table. Oh how the pressure piles up!  😭
  • 3 meals plus AM & PM kids snacks in a day   
  • 7 days, 1 whole week, every week, every month   
  • not just edible or palatable, but it must be finger-lickin' good  
  • very important, it should be healthy!   
  • not to forget, varied too, to keep taste buds excited! 
  • bonus challenge -- young palates that are still on training for more adventure
I bet this is the challenge for most of us assigned in the family kitchen, well, save for the likes of Rachel Ray, that is. ^_^  And if you are one of those with skills like hers, you are so blessed indeed!   
...So, in my case, cooking for me is truly, literally, a labor of love. There are days i very much enjoy doing it, and some off days.  But sometimes even with a full pantry or not, this cheffed up brain keeps comin' up blank. I so wish i had my mom's cooking talent, bless her heart, she's always WonderWoman in the kitchen!  Still, hope floats. After all, keep using your gifts no matter how small, and God will multiply it.  So,

" Hor Fun " or " kway teow " is a thick, flat rice noodle. " Char " means fried in Hokkien. It is a staple in Chinese cuisine, distinctly with wok hei ... I would say that delicious charred, roasted in wok taste.  Yup, this one's a favorite in my nest.  Have fun wok-tossin'! 🍜Tools Chopping board Knife Wok (or deep & wide frying pan) Ladle microwaveable bowl that can fit your portion of noodles to cook 🍜Ingredients 125g Chicken fillet,julienned a fistful of Shrimp,  peeled,  deveined,  washed & pat dry 1 small Onion, sliced 5 Garlic minced A stub of Ginger, minced 1 pack Hor fun noodles Soy sauce Oyster sauce Chicken broth Bok choi or  Pechay, sliced, whites separated from the leaves 2 Eggs, scrambled Kalamansi / lime / lemon wedges Crushed nuts for topping (optional) 🍜Steps Place the noodles in a bowl. Japanese potato salad, onegaishimasu!!!

Refreshing Crunch in every bite Nice touch of creamy from the potatoes and dressing Wonderful colors BEST of ALL: HEALTHY 🥗  Ingredients  3 potatoes, boiled &  roughly  mashed  1/2 cup of picnic ham, or 1/2 can of Spam, diced and fried. 1 cucumber, sliced 1 carrot, julienne 1/2 cup sweet corn,  1/2 cup picnic ham, diced &fried Japanese mayonnaise (*or any mayo) vinegar 1 boiled egg (optional) Salt and pepper to taste. 🥗  Steps Once the potatoes and ham are done, boiled-mashed, fried, respectively. mix altogether in a big bowl. Serve warm immediately, or it can also be served after being chilled for an hour (if in a rush 30 mins in the chiller will do.) The kids preferred without onions, so I always exclude it. Pair with some nicely fried food, like Japanese sausages, or chicken nuggets; world peace over dinner is hugely important. 💡 Inspired by: Ochikeron & Just One Cookbook

tuna sandwich fix ♣️♦️♥️♠️

A quick hunger fix that's easy to make, yet packs a flavor bomb. Ingredients : 1 can tuna, drained 1 onion, minced 1/4 cucumber, diced 1 apple diced or sliced 1 carrot, minced (optional*) Salt Pepper Mayonnaise Red chili flakes Buttered bread Steps : Cheese spread**      1 cup cheese, grated       1 type or a mix of varied cheese       Milk, water Saute the tuna in onion & carrots*. Set aside to cool. Once cool, add the other ingredients. Cover & chill in serve until ready to serve. Toast the bread. In a small pan, melt the grated cheese. Add milk and water. Mix well. It should be sticky spread consistency. Serve tuna spread, cheese spread, and warm butter bread, with chips or salsa on the side.
