There is the dilemma that some of us ask at some point in our life.... which came first, salted egg or chicken? ۟🐔
Harhar. (But carryin' on... 😁) I will say they both came at the same time exquisitely!
Here in merlion city, almost every type of food has got a salted egg version of it. No kidding! There's salted egg burger, salted egg prawns, salted egg pasta and even salted egg pastry. The latest fad, it seems, is the salted egg potato chips. I wonder what salted-egg-ish concoction will come up next!
Despite the hype for some other salted-egg-ed things, this chicken recipe is more of a classic Singaporean dish. It is very tasty and, happily I learned, quite simple to make too.
For this delicious food, i will gladly point you to Meatmen.sg's video recipe. I'm a huge fan. If you aren't yet, let me just tell you that their take on this is e a s y to follow. Their video is a feast for the eyes, the music will pump up your energy in the kitchen. 👍👍
❣By the way, salted egg in SG is raw salted egg. It must be cooked/steamed. It's different from our itlog maalat in PH, which is boiled after the brining process, and thus, ready to eat.

RECIPE: Salted Egg Yolk Chicken
Ingredients:
- 2 pcs of boneless chicken thighs (with or without skin depending on preference)
- oil for deep-frying
- 2-3 chilli padis (chopped)
- 20 curry leaves
- 1 egg
- 1 cup potato starch
- 1 tbsp oil
- 20g butter
Marinade:
- 1 tsp sugar
- ½ tsp salt
- ¼ tsp pepper
- 1 tbsp rice wine
Salted egg yolk sauce (2 servings):
- 8 salted egg yolks
- 4 tbsp oil
- 1 tsp minced garlic
- 1 tsp minced ginger
- ~5 tbsp condensed milk
1. Marinate the chicken.
- Cut 2 pcs of boneless chicken thighs into 3 cm chunks
- Add ¼ tsp pepper, 1 tsp sugar, ½ tsp salt, 1 tbsp rice wine to chicken
- Let it marinate for 15 mins
2. Prepare the eggs sauce
- Steam 8 salted egg yolks for 10 mins
- Mash salted egg yolks as fine as possible
- Add 4 tbsp oil to pan
- Fry salted egg yolks until foamy
- Add 1 tsp minced garlic and 1 tsp minced ginger.
- Fry until fragrant
- Add fresh/evaporated milk, to taste; mix well. Then, set aside sauce.
3. Fry the chicken.
- Add 1 beaten egg to the chicken thighs and mix well.
- Pour 1 cup potato starch on a tray
- Evenly coat chicken thighs with potato starch
- Heat oil to 160 degrees C, deep-fry chicken thighs until golden brown
- Drain and set aside
4. Complete the dish - sauce and chicken together.
- Chop 2-3 chilli padis
- Add 1 tbsp oil to pan
- Add chopped chilli padis and 20 curry leaves
- add 20g of butter, and half the salted egg yolk sauce
- Fry until fragrant
- Add evaporated milk* (or, condensed milk which will give a thicker consistency to the sauce)
- Add fried chicken and toss until evenly coated with sauce
- Add the remaining sauce.
5. Enjoy ^_^
Here's one yummy lunch we had -- Salted Egg Yolk Chicken. Spicy on the left and not spicy on the right (no chilli flakes added), with tangy okra salad (ladyfingers in balsamic vinegar) and warm rice in between. Delish!
P.S. As only the egg yolks of the salted egg are used in this dish, the salted egg whites make for a perfect ingredient in the okra salad. 👍 Just right!
