An Apple Fritter Treat

APPLE FRITTERS 🍏🍎

What rhymes with fritters?  Jitters,  nippers, litters? 😁

Inspired by my Ate J#2 who made a batch recently and made me and my sissies drool via Zoom over her creation.  ♬🎜Do you know the way to San Jose? Let's go there for some freshly-made-apple-fritter! ♬🎜  I do wish our huge family just live next door to each other. 
So one fine weekend, with a couple apples left in our basket, we tried it too. The kitchen smelled most promisingly heavenly while these were fryin! 


Recipe for ~16 fritters: 

fruit

  • 3 large apples
  • 1 lemon
dry ingredients
  • 1.5 cup flour
  • 3 tbsp   sugar
  • 2.5 tsp  baking powder
  • 1 tsp     salt
  • 1/2 tsp  cinnamon
  • 1 pinch  nutmeg
wet ingredients
  • 3 tbsp lemon juice (~from half of a lemon)
  • oil for frying
  • 2/3 cup  milk
  • 2 eggs
  • 2 tsp vanilla
  • 2 tbsp melted butter, room temperature

Steps:

  1. Peel, core, and slice the apples to about 1/2" thick. 
    Save the peelings for a very near-future salad topping.
  2. 1st bowl, combine the lemon juice and apple.
  3. 2nd bowl (aka final bowl), add all dry ingredients. Whisk to combine.
  4. 3rd bowl, combine all wet ingredients (except butter).
  5. Pour wet ingredients to the 2nd bowl. Use a spatula to fold together until almost combined.
  6. Add the diced apple. (yum!)
  7. Add the butter. (finally!)
  8. Mix nicely with a spatula.
  9. Prepare hot oil in a deep pan.
  10. Scoop apple fritters into the pan.
  11. Cook till nicely more-than-golden-brown and crispy.
  12. Rest in a paper towel and transfer to a baking rack.
  13. Toss with cinnamon sugar or drizzle with cinnamon glaze.

Serve immediately and enjoy!


Verdict: 6 out of 10.  not too bad for a v0.1.
guess we have a very particular kind of sweet tooth. But, we did not follow the recipe to a T.  I only had 2 large apples, which on hindsight was apparently a big deal. So, lesson learned, follow Preppy Kitchen's advise - 3 apples. more apples than batter. yes. yes.

Hummus try this!

Hummus is long overdue; this was my hubby's request for the longest time already. The classic take is always using chickpeas. M y easy excuse was that chickpeas here in our region is not as cheap; no main ingredient, no hummus! 😝 But ever so thankful for foodies around the world who share their recipes online... was I happy t o find that there are versions using eggplants, squash, and cauliflower!!! Definitely cheaper alternative to the peas. F or sure there are quite a few more options out there. But Google already had me at eggplants . Our eggplant hu mmus turned out delicious. Hummus really try this!  Sorry, but pun intended 😁.  This hummus is apparently called Baba Ganoush, originating from the Arab region.  (F ile exotic name in a shelf along long-term memory aisle.
