An Apple Fritter Treat

APPLE FRITTERS 🍏🍎

What rhymes with fritters?  Jitters,  nippers, litters? 😁

Inspired by my Ate J#2 who made a batch recently and made me and my sissies drool via Zoom over her creation.  ♬🎜Do you know the way to San Jose? Let's go there for some freshly-made-apple-fritter! ♬🎜  I do wish our huge family just live next door to each other.
So one fine weekend, with a couple apples left in our basket, we tried it too. The kitchen smelled most promisingly heavenly while these were fryin!

Recipe for ~16 fritters:

fruit

  • 3 large apples
  • 1 lemon
dry ingredients
  • 1.5 cup flour
  • 3 tbsp   sugar
  • 2.5 tsp  baking powder
  • 1 tsp     salt
  • 1/2 tsp  cinnamon
  • 1 pinch  nutmeg
wet ingredients
  • 3 tbsp lemon juice (~from half of a lemon)
  • oil for frying
  • 2/3 cup  milk
  • 2 eggs
  • 2 tsp vanilla
  • 2 tbsp melted butter, room temperature

Steps:

  1. Peel, core, and slice the apples to about 1/2" thick.
Save the peelings for a very near-future salad topping.
  2. 1st bowl, combine the lemon juice and apple.
  3. 2nd bowl (aka final bowl), add all dry ingredients. Whisk to combine.
  4. 3rd bowl, combine all wet ingredients (except butter).
  5. Pour wet ingredients to the 2nd bowl. Use a spatula to fold together until almost combined.
  6. Add the diced apple. (yum!)
  7. Add the butter. (finally!)
  8. Mix nicely with a spatula.
  9. Prepare hot oil in a deep pan.
  10. Scoop apple fritters into the pan.
  11. Cook till nicely more-than-golden-brown and crispy.
  12. Rest in a paper towel and transfer to a baking rack.
  13. Toss with cinnamon sugar or drizzle with cinnamon glaze.

Serve immediately and enjoy!

Verdict: 6 out of 10.  not too bad for a v0.1.
guess we have a very particular kind of sweet tooth. But, we did not follow the recipe to a T.  I only had 2 large apples, which on hindsight was apparently a big deal. So, lesson learned, follow Preppy Kitchen's advise - 3 apples. more apples than batter. yes. yes.
Here's what we made (at lower middle of image below):

oh my chickpeas! (hummus try this too!)

"Not a chick 🐤, it's not a pea! It's chickpeas!" My hubby's long wait is over, finally, chickpeas hummus is served! Really delish. Garbanzos  or otherwise known as chickpeas , is a power food from the legume family. Using only the trusty food processor, t his dip is one easy and nutritious dip to make.  A nd because it's got that peanut-y butter taste, my little chickpeas (👦👧👧) enjoy it too. Buddy-up with some veggie sticks, and their favorite potato chips, and they won't be able to resist it.  If not 100% healthy plating, at least, partly healthy. We win some.✊         Ingredients 6 tbsp lemon juice 2 garlic shredded 1/2 tsp salt 2.3 cup peanut butter, or tahini (more legit) 1 can of washed/drained garbanzos 1 tsp salt ice-cold water 1 tsp cumin powder 1/2 tsp paprika powder or chilli flakes Steps 1 Marinate In a food processor or blender, blend together lemon juice, shredded garlic and salt. Let sit for 10 mins to allow the flavors to marry. 2 Blend

Steamed eggy pie

If I've not mentioned it already, my little family is in love with chicken  🐔  eggs. 😍 We do not have the  e99y as our beloved padre de pamilya for no reason at all.  Omelette, sunny side up, egg sandwich, deviled eggs, scotch eggs, adobo eggs, salted eggs, egg soup, oh the list does go on!  Another of our favorite take is steamed Eggy Pie . Much-loved by my brood, this one is perfect for merienda in school and at work or right in the comfort of home.  Dessert? Easily so! Simple and delicious, this is also a no-bake recipe. Instead of oven, only a steamer  is needed. And THAT makes it an absolute keeper in my recipe list!  😎 Steamed Eggy Pie Serving size: 8-inch pan 1+1/2 cup all-purpose flour 1/2 cup cold butter 2 tbsp sugar 3 large eggs 1 cup evaporated milk 3/4 cup condensed milk Vanilla essence Prepare the crust: 1. Mash and mix the dry ingredients below.     1 +  1/2 cup all-purpose flour     1/2 cup cold butter chopped to small cubes     2 tbsp sug

let's get salted!

There is the dilemma that some of us ask at some point in our life.... which came first, salted egg or chicken? ۟🐔 Harhar.  (But carryin' on... 😁) I will say they both came at the same time exquisitely! Here in merlion city, almost every type of food has got a salted egg version of it. No kidding! There's salted egg burger, salted egg prawns, salted egg pasta and even salted egg pastry. The latest fad, it seems, is the salted egg potato chips. I wonder what salted-egg-ish concoction will come up next! Despite the hype for some other salted-egg-ed things, this chicken recipe is more of a classic Singaporean dish. It is very tasty and, happily I learned, quite simple to make too. For this delicious food, i will gladly point you to Meatmen.sg's video recipe. I'm a huge fan. If you aren't yet, let me just tell you that their take on this is  e a s y  to follow. Their video is a feast for the eyes, the music will pump up your energy in the kitchen. 👍👍 ❣By t
