CreamTunaSpinach-wrapped memories 🎁

Pita wraps and cream bring fond memories, of me in my 2nd-trimester 1stborn baby bump with a HUGE craving for a pita-wrapped goodness of creamy tuna. So fortunate that Ayala Cebu, just across my workplace then, had a stall that sold a very satisfying version of this!

🎶 Yes, "Pita wrap dreams are made of this"... 🎵🎶

A very welcome healthy twist to tuna wraps is the iron-rich spinach leaves add-on, which my current town has plenty supply of. Other alternatives would be kale, and other similar greens.

And here was 1 of my many takes.

Ingredients-

2 garlic shredded

2 generous knobs of butter*

2 cans of spicy tuna in oil

Pinch of salt

Dash of pepper

1/2 tsp chili flakes

1 can cream

1 pack of spinach leaves

1/2 cabbage diced (optional)

1/2 apple diced (optional)

1 tsp lemon juice

pratha or wraps

Steps-

Saute garlic in butter, add salt.

Add tuna, cook for 3 minutes.

Optional to add a bit of the oil from the can. But for healthier version, leave that out.

Spinach goes in, saute for a minute.*

Add the apple bits. Saute ~2 minutes.*

(You can switch up these 2 ⤴️, it's all up to your preferred doneness; the earlier it gets into the pan, the more cooked it gets).

Sprinkle the salt, pepper, and chili flakes.

Pour the cream. Mix well.

Add the lemon juice.

Taste, and tweak if needed.

And finally, slather thick or thin to your favorite wraps, and take a bite!

🌯 ~~💗~~🌯

Made more memory connections with my kids with this-- many a warm meal of Spice n Cream Tuna Wraps shared while they're growing up. Mmm. Good, good, good.
Someday, I hope they'll remember these times fondly too.

Creamy Miso 🥣

I hated miso soup. And then I loved it ever since. This comfort soup may have a slight tangy taste depending on what type of miso is used. My hubby does not like a hint of sour/tangy stuff. To discover that milk could be added to spin off the taste was a welcome revelation!!! The aroma and taste always takes me back to my days in Japan. My very 1st sip of miso soup was at the canteen of an all-ladies dorm during my very 1st work trip in beautiful Tamagawa prefecture. It was my 1st time away from my motherland, and 1st time to experience winter, at that. To say that I was in a state of culture shock is an understatement. I loved soft fluffy Japanese rice. The roasted flaky saba fish. Ramen noodles. Crunchy karaage. Not miso soup though. I hated miso soup. But that fateful cold night, I have just reached "home" from the 10-minutes trudge from work. A quick change to warmer clothes, I was immediately at the dinner table. The warm soup felt grudgingly comforting. The next spoonf...
