Today, April 14th 2020.   Mommy's birthday on lockdown because of the virus outbreak. Inspite of it, entire clan - daughters, sons-in-grace, grandchildren, grandchildren-in-grace, got together online. Grateful hearts gathered.  Thankful to the Lord for the life of Mommy G.   From the day He made her in Apong's womb, through the many seasons of her life, Daddy God has been faithful.  Father has blessed ahead her journey and  written  ahead her  destination.  Surely, with long life with many good days as He's promised, will He satisfy mommy. Praise the Lord for each day He made for her. Sans the birthday cake, Z and I made this polvoron together today. Z wanted it with Oreo bits. (I pray our time in the kitchen be more of happy memories to her, than of me scolding 😅) How timely that there's this mooncake mould from hubbytot. How do i - Sterilize Jars???

Need to re-use that jar for food storage - jam, spreads, candies?  i, for one, keep forgetting how! so i'm posting it here to help my brain-o.😄    --------------------------------------------------------- MISSION : STERILIZE JARS 100%!  STEPS : Wash jars in hot suds and rinse in scalding water.  Put jars in a water-bath canner or on a rack set in a deep pot and cover with hot water. Bring water to a boil and boil jars, covered, 15 minutes from time steam emerges from pot .  Turn off heat and let jars stand in hot water.  Just before filling them, invert jars onto a kitchen towel to dry .   ( Jars should be filled while still hot. )  Sterilize lids in boiling water 5 minutes. source: Epicurious ---------------------------------------------------------- Mission accomplished! 

Okonomi-yummy!

Okonomiyaki This Japanese dish is simple to make, delicious, and very filling! Non-batter ingredients : 1/2 head cabbage julienned then cubed scallions / spring  onions Spam / bacon / thin pork belly slices (optional) Bonito flakes (optional) Batter ingredients : 1 cup plain flour / cake flour 1.5 tsp baking powder 1 cup dashi (or 1/2 chicken bouillon cube dissolved in 1 cup hot water 1 cup fresh milk  + 1tsp baking powder (or  cup  japanese  mountain yam2) 4 eggs lightly beaten Whisk together all batter ingredients except eggs        (do not  overwhisk ). Cover and put in  fridge  for 20 minutes. After 20 minutes, whisk in gently the beaten eggs. Add scallions / spring onions (leave some for garnish). Add cabbage. Mix well. Like coleslaw - but  pancakey  cabbage. Okonomi sauce ingredients : 1 tbsp white sugar 3.5 tbsp  worcestershire  sauce 2 tbsp oyster sauce 4 tsp ketchup...

Biko Thai style

Biko is a sweet rice cake in the Philippines. It is made from glutinous rice, brown sugar and coconut milk. To me, when it is topped with latik (coconut caramel), then it is an extra-special kind of biko. 😍 I love it served warm during merienda time, paired with a glass of kalamansi (Philippine lime) juice. It brings to mind happy memories, of simple times with family, when we all have this afternoon delight in my mom's garden, a welcome treat after hours of chores (well, seemed to me like the chores took forever, then 😅).  I have fond memories of my Auntie Meling bringing a platterful of biko whenever she makes one in her home across our own.  In Cebu, it was my first time to have it served together with ripe mango.  Oh, what a heavenly pairing that was! As my experience with biko has always been to eat it, I was so happy that my hubby once tried making this Thai Sticky Rice version, inspired by our favorite Chef John of Food Wishes. "Pansit for loooooong life!" is how we say it in my country, drawing a parallelism to the length of the noodle to the length of one's life. 😎 Pansit or pancit means noodles. The origin of noodles in Filipino cuisine can be traced back to the era in Philippine history when the early Chinese migrants, traded and then settled in the archipelago.   According to Wiki, the word pansit is derived from the Hokkien word "pian i sit" meaning convenient food, attributing to the ease and speed of preparing this dish. Since its introduction, noodles has been adopted and has evolved into its many variations islands-wide that are a staple today. As such, growing up, pansit was part of my family's tradition, as is typical in most Filipino homes. It is a regular in the family's menu. let's get salted!

There is the dilemma that some of us ask at some point in our life.... which came first, salted egg or chicken? ۟🐔 Harhar.  (But carryin' on... 😁) I will say they both came at the same time exquisitely! Here in merlion city, almost every type of food has got a salted egg version of it. No kidding! There's salted egg burger, salted egg prawns, salted egg pasta and even salted egg pastry. The latest fad, it seems, is the salted egg potato chips. I wonder what salted-egg-ish concoction will come up next! Despite the hype for some other salted-egg-ed things, this chicken recipe is more of a classic Singaporean dish. It is very tasty and, happily I learned, quite simple to make too. Steamed eggy pie

If I've not mentioned it already, my little family is in love with chicken  🐔  eggs. 😍 We do not have the  e99y as our beloved padre de pamilya for no reason at all.  Omelette, sunny side up, egg sandwich, deviled eggs, scotch eggs, adobo eggs, salted eggs, egg soup, oh the list does go on!  Another of our favorite take is steamed Eggy Pie . Much-loved by my brood, this one is perfect for merienda in school and at work or right in the comfort of home.  Dessert? Easily so! Simple and delicious, this is also a no-bake recipe. Instead of oven, only a steamer  is needed.
