50 Shades of Purple (Omelette)


Are you one of those who just cannot get enough of food of the purple hue?
Grapes, yam, blueberries, eggplants and that red cabbage.
Traditional Filipino snack recipes like Halaya and Sapin-Sapin.  Even Ube Ice Cream!
Refreshing Berry smoothie and Grape juice slush!
The list can go on!

I surely have a penchant for such.  
To me, any dish with this bright shade never fails to turn up a notch in my yummy chart. 📈

So, sharing with you this colorful dish that my family gobbled up a few suppers ago.
Hope you give it a try,  tweak here and there to your taste and let me know how your version goes!

RECIPE:   Purple Omelette

☙ 2 tablespoons olive oil                               
☙ 1/2 onion minced                  
☙ 1 russet potato, diced           
☙ 1 purple sweet potato, diced 
☙ 6 eggs                                   
☙ 1/2 teaspoon salt                    
☙ ground pepper 
☙ 1 garlic minced                      
☙ a pinch of salt                              
☙ 1/2 pack spinach     

[here begins the purple brick road]
1>   Add olive oil to pan on medium heat.
2>   Add onion to hot olive oil.
3>   Add potatoes & fry on high heat until soft enough & caramelized. 
4>   Stir every now & then so all bits are cooked. 
5>   Do the poke-with-fork test to check potatoes are done.

[2nd stop - add some yellow]
6>    Crack eggs into a mixing bowl. Don't whisk.
7>    Add the cooked potatoes into the bowl (minus the oil, please!).
8>    Season with salt & pepper, to taste.
9>    Combine the potato-egg-salt gently. 
10>  Leave for a minute to thicken.

[3rd stop - add some greens]
11>   Reuse your frying pan & oil -- saute garlic.
12>   Sprinkle salt and sweat the garlic 'til golden brown.
13>   Stir spinach in and cover the pan.
14>   Cook for 2 mins until wilted enough. 

[Finish line!]
15>    Add the potatoes-egg mixture. 
16>    Gently mix together with spinach.
17>    Cook uncovered for 2 mins on high heat.
18>    Flip the omelette.
19>    Cook the other side for 2 mins on high heat.
30>    Slice, serve and enjoy! ^-^

Stove-top e99 pie

No oven, no steamer, no problem! All you need is hunger and LOVE to find a way 😜.  ...well, also a not-so-shallow non-stick frying pan . With staple ingredients, you're set for this comfort food! My teen-to-be Chef  M  tried this stove-top method, 🙆"So smart", she'd quip. Yup, it was easy as 123! 🖐️Steps Ready the tools. Prep the ingredients for crust and filling. Ready the crust for cooking. Place the cooking pan with ready crust on the stove. Pour the filling gently using a strainer, onto the crust. Fill up to desired depth; ke ep in mind to make room for the clothed lid.  Cover with clothed lid.
