What's not to like with pesto?
I say, "None!"
I am certain there will be some of you with a ready answer.  And to that I say, "To each his own, my friend." :-)

I am so thankful for my precious big sister who introduced me to this heavenly Italian sauce. She has lived in Italy for so many years, and when she came home for a vacation, she had brought so much Italian food to take our brood on an Italian gastronomic tour! I have to admit, i did meet my first green mix with a wary eye. I remember I gave a tentative taste to my very 1st pasta la pesto, which my sister had excitedly prepared for the family.  At that moment, my brain, together with all my tasting senses -- tongue, eyes and nose, reconciled to one wonderful fact -- what a pleasing pleasing pleasing thing this is indeed!

From then on, i have tried many a jar from many brands.  Consistently, I have never been disappointed.

Very recently, I made a batch from scratch, but with a spin. It was so easy!
As I consider myself just a regular cook in my home, take heart when i say it is easy, because it means it really is just so easy. :-)

Homemade Spinach Pesto

Olive Oil         1 cup
Spinach           4 cups
Walnuts           1/2 cup
Garlic              4 cloves
Lemon juice    1/2 tsp
Salt                   1/2 tsp
Pepper              1/2 tsp
Parmesan / Cheddar cheese       1/4 cup  (optional)

1.  Combine all in a food processor to your desired consistency.
       Throw in a can of tuna 🐟 and it transforms into Tuna Pesto!
       Try moringa leaves instead of spinach, and you've upped its healthy factor.
2.  Transfer in a sterile jar.
3.  Store in the fridge.
         I kept a jar of this for 3 weeks in the fridge.
         Perhaps it can last longer, but it just could not, not where I am anyway. :-p
4.  Enjoy this with your pasta, sandwich, pan-fried chicken fillet and more! 
     ^_^

Stove-top e99 pie

No oven, no steamer, no problem! All you need is hunger and LOVE to find a way 😜.  ...well, also a not-so-shallow non-stick frying pan . With staple ingredients, you're set for this comfort food! My teen-to-be Chef  M  tried this stove-top method, 🙆"So smart", she'd quip. Yup, it was easy as 123! 🖐️Steps Ready the tools. Prep the ingredients for crust and filling. Ready the crust for cooking. Place the cooking pan with ready crust on the stove. Pour the filling gently using a strainer, onto the crust. Fill up to desired depth; ke ep in mind to make room for the clothed lid.  Cover with clothed lid. Make sure the cloth does not touch the top of the filling or top of the crust.   Warm the stove to its super-lowest * setting . Cook for 40 minutes.
