🍅 Chicken Parmiggiana 🍅

Looks pretty & fancy schmancy 🤵 . For something VERY flavorful, the steps to make this is fairly easy & straightforward, makes sense that it's pinned up in my fam's menu. 📌



A reunion family dinner at Dakong Balay, and my precious  niece ordered this dish.  Elegant, Savory, Filling and Rich. 

I was inspired! A week later, this was our star dish for Media Noche, to welcome New Year 2025!


🐔TOOLS

meat mallet / kitchen hammer / burger press

non-stick pan

sauce pan

🐔INGREDIENTS

chicken fillet, "butterflied" or chick leg boneless butterflied & flatten with meat mallet.

salt

pepper

flour

2 eggs

breadcrumbs

cheese, grated (cheddar, mozzarela, parmesan, etc. Got the authentic Italian parmiggiano? Even better!)

cream or beschamel sauce (my Z does NOT like cheese) so this one's for her 😉

parsley

2 tomato, diced

1/2 onion, minced

tomato sauce


🐔GOALS

-FLATTEN protein / meat

-THIN flour coating only

-HOT frying oil

-for plating, pour the sauce and form a donut circle. SURROUND crispy meat with tomato sauce, NOT on top of the sauce, or even top with sauce to keep it CRISPY! (we dun wan soggy meat🫷).


🐔Steps - meat

  1. FEB method - coat with Flour. Pat pat every cranny, then shake off excess.
  2. then coat with Egg. with fingers or brush, spread to every nook.
    end with coating of Breadcrumbs.

  3. Heat the pan, add the oil for deep-frying
  4. Do the chopsticks-bubble oil test for the right oil temperature.
  5. Gently put the breaded chicken.  
    Do not crowd the pan.
  6. Transfer to plate with table napkin or wire rack.
  7. Finish remaining meat, if there's more.

🐔Steps - sauce

  1. Heat olive oil in sauce pan.
  2. Saute garlic, for a minute.
  3. Add onion, cook for minute.
  4. Add tomatoes, then salt.
  5. Cook for 2 minutes.
  6. Add herbs (oregano, basil, thyme, rosemary, etc, to your heart's desire).
  7. Add tomato sauce.
  8. Add 1/4 cup water. Mix well.
  9. Let it simmer for 5 minutes.
  10. Taste test.
🍽️Plating
  1. To plate, pour sauce carefully & form a donut shape (yup, leave that hole in the center!)
  2. Place the crispy meat in the middle.
  3. Top with beschamel sauce or the grated cheese.
  4. Serve hot & enjoy!

Corn Ribs Steak 🌽

If you love nibblin on a sweet corn and you also love a good juicy steak, (and u love corny dad jokes. 😁🤭) knock yourself out with this healthy snack. 😃🥰 Steps : Prep the dry-rub Mix well in a small bowl the following- 1 tbsp Garlic powder (or shredded garlic, or garlic paste) 2 tbsp Smoked Paprika 1 tsp Red Chili Flakes* (to taste) 1 tsp Pepper* (to taste) 1 tsp Salt Prep the corn ribs 2 pcs whole sweet corn, cleaned, sliced to bite-sized "sticks" Place the corn ribs in a big non-staining* mixing bowl.   (*paprika powder can leave stains in wood or plastic, i found 😿) Add the dry rub and rub gently ALL OVER the corn. ( *viz iz va secret to oozing great taste 😉) Leave to rest for at least 15 minutes. Heat up a grill pan or frying pan to medium heat. Melt a knob of butter. Arrange the ribs on the pan, do not crowd. Creamy Miso 🥣

I hated miso soup. And then I loved it ever since. This comfort soup may have a slight tangy taste depending on what type of miso is used. My hubby does not like a hint of sour/tangy stuff. To discover that milk could be added to spin off the taste was a welcome revelation!!! The aroma and taste always takes me back to my days in Japan. My very 1st sip of miso soup was at the canteen of an all-ladies dorm during my very 1st work trip in beautiful Tamagawa prefecture. It was my 1st time away from my motherland, and 1st time to experience winter, at that. To say that I was in a state of culture shock is an understatement. I loved soft fluffy Japanese rice.
