ikea meatballs


“Eee-KEH-Yah,” said the Swedish speaker
“AYE-kee-yah,” said an English speaker.

However, it's pronounced, i love IKEA.  It is my mini-heaven. Thanks to their showrooms, i get my free house-therapy fix. 🙋

Now my kids love it too. Not for the showroom and shopping, but for a fun time at Smaland 🍄🏠, and then a yummy treat at their restaurant.

Among many others, our favorite is _the_ Swedish meatballs.
Those tasty meatballs, and the glorious gravy paired with the blueberry sauce.


Thanks to my best friend, Chef John, 😜, i can recreate this dish at home.

i n g r e d i e n t s:
2 tbsp butter
1 onion minced
1/4 cup milk
2 eggs
250g ground pork
250g ground beef
8 minced garlic
1.5 tsp salt
3/4 tsp pepper
1/3 cup plain breadcrumbs

🥩  🥩 Making the meatballs:
With a dash of salt, sweat the onion in 2 tbsp butter.
Transfer butter-onion in a mixing bowl. let cool for a bit.
Add 1/4 cup milk ~temper it - add slowly.
Add 2 eggs.
Mix everything together.

Add your choice of meat.
Add minced garlic.
Add your choice of minced veggies (carrots, celery, etc.)

Rest the mixture for an hour to let flavors blend and soak in.

🥣 🥣 🥣 Making the gravy:
Make a roux - 2 tbsp butter, 3 tbsp flour
Add 3 1/4 cupcup beef stock
1/2 cup cream
1/4 tsp Worcestershire sauce
1/2 tsp sugar
Salt
Pepper
Simmer until slightly thick

🍇 🍇 🍇 🍇 🍇 Making the berry sauce:
2.5 cup berries (mixed or not, frozen or fresh)
1/2 cup white sugar
1/4 cup water

Combine the berries, sugar, and water in a small saucepan; bring to a boil and cook at a boil for 5 minutes, scraping the bottom as needed to keep from burning. Reduce heat to low; simmer the mixture until thick, about 10 minutes. 
Serve warm or cold, up to you.

Serving:
Serve with mashed potatoes and some tangy berry sauce / berry jam

my Viet-Thai Sauce

"Sosi ka ba?" 😅 For the "saucy" eater who enioys pairing gustatory delights with the perfect sauce... Here's our take on the viet/thai sauce.   🍶 Ingredients: Garlic,peeled and crushed Spring onion, minced 1/4 Lemon, juice squeeze 1 to 1.5 tbsp Fish Sauce 2 tsp Sugar pinch of Salt dash of ground Pepper 1 tbsp Red Chili Flakes 1 tbsp of ketchup or tomato sauce 1 tbsp Sriracha (optional) 4 tbsp of warm Water (very important! this balances the acid) Enjoy it with favorite dishes 😃

Corn Ribs Steak 🌽

If you love nibblin on a sweet corn and you also love a good juicy steak, (and u love corny dad jokes. 😁🤭) knock yourself out with this healthy snack. 😃🥰 Steps : Prep the dry-rub Mix well in a small bowl the following- 1 tbsp Garlic powder (or shredded garlic, or garlic paste) 2 tbsp Smoked Paprika 1 tsp Red Chili Flakes* (to taste) 1 tsp Pepper* (to taste) 1 tsp Salt Prep the corn ribs 2 pcs whole sweet corn, cleaned, sliced to bite-sized "sticks" Place the corn ribs in a big non-staining* mixing bowl. (*paprika powder can leave stains it seems) Add the dry rub and rub gently ALL OVER the corn. ( *viz iz va secret to oozing great taste 😉) Leave to rest for at least 15 minutes. Heat up a grill pan or frying pan to medium heat. Melt a knob of butter. Arrange the ribs on the pan, do not crowd. Grill each side for 5minutes. Transfer to mixing bowl/platter.
