🧄Sarap ng Bak Kut Teh

Bak Kut Teh. This is one soup that comforts yet awakens your soul at the same time.

The zing of peppery, garlicky broth with savory fall-off-the-bones tender pork.

It's a dish that I would say most Pinoys love here in SG. It's like a taste of home... reminiscent of pochero and nilagang baboy, though slightly different.



🧄🥩Tools

  • Thermal cooker, or claypot, or any deep enough and thick enough pot that you use for soups and stews
  • Soup cloth
  • Ladle
  • Meat strainer

🥩Ingredients- ribs prep

  • 2L water
  • 750g pork ribs

🧄Ingredients- spice prep

  • 4 bulbs garlic, unpeeled but clean and crushed gently
  • 1/8 cup peppercorn
  • 1 tsp soy sauce
  • 1.8 L water
  • 1 pack Song Fa bak kut teh mix (includes 2 spice packets inside)🧄
🥩Steps

***Remove the scum from the ribs

  1. Boil 2L water.
  2. Add the pork ribs carefully, and scald them for 5minutes.
  3. Strain out the ribs onto a bowl.
  4. Throw out the water.

***Prepare the spices

  1. Dry the bottom of the pot with a kitchen towel.
  2. Heat the stove to low heat.
  3. Roast the garlic on medium heat in the pan (yup,no oil please), let it brown a bit, stirring once in a while so it does not burn.
  4. Transfer to a bowl.
  5. Add and roast the peppercorns for a minute, stir once in a while.
  6. Set aside a few garlic cloves for garnish.
  7. Transfer the garlic and peppercorns into separate cloths and tie securely into packets. (handle carefully, it might be hot to the touch!)
***Prepare the soup
  1. Put back the garlic and the peppercorn packet into the pot.
  2. Add 1.8L water.
  3. Add 2 packets of Song Fa spices.
  4. Cover with lid 
  5. Let it boil gently for 15 minutes.
  6. Add the pork ribs and mix well.
  7. Cover and let it rapid boil (medium heat) for 20 minutes.
  8. Lower the heat and let it gebtlt simmer for 30 minutes more.
  9. Taste the soup. If the spice is enough, remove the Song Fa packets. If not, let it simmer for additional 10 minutes, and then remove the spice packets.
  10. Taste the soup, adjust as needed-- add water little by little to your liking.
  11. Transfer the thermal cooker to its thermal pot. Let it keep warm until ready to serve.
  12. Serve, garnished with a few of the set aside roasted garlic cloves.

No oven, no steamer, no problem! All you need is hunger and LOVE to find a way 😜.  ...well, also a not-so-shallow non-stick frying pan . With staple ingredients, you're set for this comfort food! My teen-to-be Chef  M  tried this stove-top method, 🙆"So smart", she'd quip. Yup, it was easy as 123! 🖐️Steps Ready the tools. Prep the ingredients for crust and filling. Ready the crust for cooking. Place the cooking pan with ready crust on the stove. Pour the filling gently using a strainer, onto the crust. Fill up to desired depth; ke ep in mind to make room for the clothed lid.  Cover with clothed lid. Make sure the cloth does not touch the top of the filling or top of the crust.   Warm the stove to its super-lowest * setting . Cook for 40 minutes.
