🥥 Lami ang Ginataang Gulay 🥬🍆🎃

Curry-like, as 2 of my kids thought it was curry cooking in the kitchen.😜

This is fragrant, coconuty, silky, full of flavor. and packed with nutrients. 🤎 A classic taste of home sweet home. 🏝️

Easy to make, my Z made this at her first try, and it was so lami! (delicious). Approved by my girls 👌👌.

 

🥥 Ingredients

  • Coconut milk
  • Fish sauce
  • Shrimp, deveined
  • 5 garlic, minced
  • Veggies, sliced.
eggplant🍆, squash🎃, greens: spinach 🥬, okra, string beans, red bellpepper. 
  • Red chili, thinly sliced (optional)
  • Red chili flakes (optional)
  • Paprika (optional)
  • White pepper
  • Shrimp cubes (optional)
  • Dilis (optional)

🥥 Tools

  • Cooking pot & ladle
  • Chopping board & knife 

🥥 Steps

  1. On medium heat 🔥, saute garlic
  2. Add shrimp, stir fry for 3 minutes.
  3. Remove  shrimp & set aside, so it does not overcook.
  4. Add shrimp paste, saute for 1 minute. 
  5. Add veggies, hard veggies first (like root crops), stir.
  6. Add fish sauce.
  7. Add 1/4 cup water, add coconut milk. Mix well.
  8. Cover pot slightly.
  9. Cook veggies until tender (do a fork poke test of the hardest veggie in mix)
  10. Add less hard veggies, cook, and add leafy greens in last 5 minutes of cooking. Cover pot slightly.

Enjoy with warm rice!

tuna sandwich fix ♣️♦️♥️♠️

A quick hunger fix that's easy to make, yet packs a flavor bomb. Ingredients : 1 can tuna, drained 1 onion, minced 1/4 cucumber, diced 1 apple diced or sliced 1 carrot, minced (optional*) Salt Pepper Mayonnaise Red chili flakes Buttered bread Steps : Cheese spread**      1 cup cheese, grated       1 type or a mix of varied cheese       Milk, water Saute the tuna in onion & carrots*. Set aside to cool. Once cool, add the other ingredients. Cover & chill in serve until ready to serve. Toast the bread. In a small pan, melt the grated cheese. Add milk and water. Mix well. It should be sticky spread consistency. Serve tuna spread, cheese spread, and warm butter bread, with chips or salsa on the side. Hummus try this!

Hummus is long overdue; this was my hubby's request for the longest time already. The classic take is always using chickpeas. M y easy excuse was that chickpeas here in our region is not as cheap; no main ingredient, no hummus! 😝 But ever so thankful for foodies around the world who share their recipes online... was I happy t o find that there are versions using eggplants, squash, and cauliflower!!! Definitely cheaper alternative to the peas. F or sure there are quite a few more options out there. But Google already had me at eggplants . Our eggplant hu mmus turned out delicious. Hummus really try this!  Sorry, but pun intended 😁.  This hummus is apparently called Baba Ganoush, originating from the Arab region.  (F ile exotic name in a shelf along long-term memory aisle.
